[IBU] Bockfest

And while we're on the subject, can someone explain what all the
"caramelizing" of the bock does?
You know, when they dip the hot irons into your mug of beer.

It definitely makes the bock sweeter... and I imagine it cooks off some of
the alcohol.
Plus I still don't understand how it doesn't shatter those ice cold glass
mugs...

But what exactly is the caramelizing doing?
