[IBU] Yeast Test at Next Meeting

I did a very similar test last year with a pale ale and was very happy
with the results. I brewed a 15 gallon batch of a standard pale ale. I
made about a liter starter of 1056 and split that between 2 5 gallon
carboys and pitched one packet of the Saf - 56 (same yeast, different
name I think) in to the third. I didn't rehydrate or anything. Just
pitched and oxygenated all three the same. There was as much difference
between the 2 1056 carboys as there was with the dry yeast.
Years ago I used quite a bit of dry yeast, but found most to be at least
somewhat over attenuative. I tried a bunch and found the Nottingham to
be about the best, but it still seemed to dry the beers out more. The
Saf - 56 didn't seemed to do that and I still keep packets in the fridge
to brew when I don't have a yeast cake to harvest or don't want to mess
with a starter.
One thing, though. I have never used the dry for more than one
generation. I don't know that it matters much, and with the cost you
wouldn't have to, but I am used to getting 3 - 4 batches from my 1056 if
I am brewing regularly. Have you tried reusing the cake?

About 2 months go, I made two cream ales using the exact same recipe but
used Fermentis US-05 in one batch and Wyeast 1056 in another. I have
been using US-05 in about 80% of my beers for the last 1.5 years or so
and have been very pleased with the results. I've read several places
online that people consider 1056 and US-05 to be almost identical, so I
wanted to test that out for myself. I thought that at next week's
meeting, I could bring 2 or 3 22oz bottles of each beer and we could do
a blind taste test between the two. Only I would know which beer was
which. If you'd be interested in this experiment, please let me know
and I'll plan on bringing the beer. I will also be doing this test at
the ABL meeting tonight.
