Adam:

As long as you don't go overboard (ie reasonable amounts of sugar in the 
grist) you can substitute the jaggery for Belgian candy sugar.  What will it 
taste like?  Your guess is as good as mine.  One reference I found indicated 
that it was the same as Turbinado sugar.  However the exact reference 
(http://www.sugarindia.com/jag.htm) about Jaggery stated:  "According to an 
experiment, Turbinado Sugar treated rats showed enhanced translocation of 
coal particles from lungs to tracheobronchial lymph nodes.  Hence, it fights 
pollution too!"

Adam, please save the planet and use this sugar.
